A Home Kitchen Ready for Business: Hygiene, Equipment, Pets and Temperature
A practical checklist for controlling cross-contamination and unsafe food in a residential kitchen.

Important note: This ManaHalal guide is educational material. It is not an approval letter from JAKIM/JAIN/MAIN (the state Islamic religious departments and councils), a PBT (local authority) licence or a KKM (Ministry of Health) listing. The scope and eligibility for certification are assessed based on the actual operation, premises, documents and current rulings. The KKM Home-Based Food listing is not the SPHM (Sijil Pengesahan Halal Malaysia, the Malaysia Halal Certificate) and does not allow the use of the Malaysian halal logo.
A kitchen that suits cooking for the family does not necessarily have enough control when it makes food for dozens of customers. The main challenges of a home kitchen are shared space, equipment, storage and the paths people walk through.
Simple zoning, without treating it as official approval
Divide the kitchen into four clear functions: receiving ingredients, storage, preparation/cooking and cooling/packing. Raw food, especially raw chicken/meat, must be kept from touching ready-to-eat food.
| Zone | Common risk | Control measure |
|---|---|---|
| Receiving ingredients | Ingredients at the wrong temperature, leaking packaging | Check the supplier, the condition of the goods and the dates |
| Storing | Raw products dripping onto finished food | Covered containers, labels, arrange by risk |
| Preparing | Shared chopping boards/equipment | Separate use for raw and ready-to-eat; wash/sanitise |
| Cooking | Food not hot enough | Use a time/temperature procedure that suits the product |
| Cooling/packing | Re-contamination; food slow to cool | Set up a clean flow; monitor temperature/time; cover and label |
| Delivering | Temperature rising or falling out of control | Use a suitable thermal container and keep delivery records |
A safe temperature is not necessarily one number for every product. Follow current KKM guidance for the type of food, cooking method, cooling and delivery. Do not use a single figure without confirming its category.
Animals, children and household activity
For hygiene, limit pets and people who are not involved from entering the production area. Keep household chemicals, medicines, personal items and family food apart from business ingredients. Using the same equipment for mixed purposes must be assessed for contamination risk and halal control.
If the business keeps going and is large in scale, a separate commercial kitchen may be a more practical choice than renovating a home kitchen without certainty from the PBT or the certifying body.

- Equipment that must be dedicated has been identified.
- Refrigeration equipment can be monitored with a suitable thermometer.
- Waste and used cooking oil are managed cleanly.

This kitchen check is a food safety preparation tool, not confirmation that the house has been approved as an SPHM premises.
