An Audit-Ready Bakery Kitchen: Equipment, Storage and Cleanliness
Arrange the receiving, storage, mixing, baking, decorating, chiller and delivery areas with cleaning records.

ManaHalal note: An educational guide to help you prepare. It is not a certificate, an approval or an official eligibility decision from JAKIM/JAIN/MAIN (Jabatan/Majlis Agama Islam Negeri, the state Islamic religious departments and councils). Operators need to check the requirements in force and the scope of their own application.
A bakery works differently from a restaurant: ingredients are measured, dough is mixed, batter is rested, cakes are baked, cream is chilled, products are decorated and finally handed over. The auditor needs to be able to follow this flow without getting confused between approved ingredients, ingredients not yet checked and non-food items.
Plan the kitchen along the direction of work
Suggested flow: receiving ingredients → dry store/chiller/freezer → weighing → mixing → baking → cooling → decorating → packing → sale/handover. The flow may cross over in a small space; what matters is that the risk of contamination and stock mistakes is kept under control.
| Zone | What is checked | Management evidence |
|---|---|---|
| Receiving | Label, supplier, relevant certificate, condition of the packaging | Receiving form and invoice |
| Dry store | Ingredients identified and dated, unapproved ingredients kept separate | Shelf labels, FIFO/FEFO system |
| Chiller/freezer | Cleanliness, condition and temperature according to the product | Temperature log, action if outside the range |
| Mixing/portioning | Scales, clean containers, spoons and spatulas identified | SOP, sanitation schedule |
| Baking/cooling | Avoid cross-contamination, control finished food | Process and cleaning records |
| Decorating | Cream, gelatin, toppings and special equipment | List of approved ingredients |
| Packing | Consistent labels, customer information, lot if needed | Handover log, label artwork |
Equipment that is often overlooked
Pastry brushes, piping bags, silicone spatulas, moulds, nozzles, cake turntables, serrated knives, racks and baking trays need to be cleaned according to the SOP and must not be mixed with materials that are not permitted. Cleaning agents, sanitizers and chemicals need to be controlled and stored separately from food.
If you buy a second-hand machine, ask for the record of its original use and discuss the cleaning or special action needed with the authorities when there is a risk of contamination. Do not assume every case is solved with an ordinary wet wipe.
KKM food safety is not a halal certificate
Food handler training, the anti-typhoid injection, premises cleanliness, labelling and storage temperature relate to food safety obligations. These requirements run alongside halal certification, but KKM (Ministry of Health) registration or MeSTI compliance is not the same as SPHM (Sijil Pengesahan Halal Malaysia, the Malaysia Halal Certificate).
For dairy cream, cream cakes and perishable products, set the temperature, the exposure time at the counter, the cooling and the shelf life based on the nature of the product and suitable food safety controls. Do not guess how long a cake keeps from its appearance or general experience.
Kitchen inspection flow
A 15-minute check before operations
- All stock is in labelled places, not on the floor.
- Damaged, expired or not-yet-checked items are separated and marked.
- The chiller/freezer is working and the follow-up action is clear when the temperature is outside the limit.
- Workers know where the cleaning schedule and the records are.
- Customer products and raw materials are not mixed.
- Decorating tools and racks are ready to use without any risk of contamination.
Output of this article: a simple kitchen flow plan and the en-log-pembersihan-suhu.csv used in real operations, not only filled in before an audit visit.
