Central Kitchens & Cloud Kitchens

Audience: owners of PKS (small and medium enterprise) central kitchens, delivery-only restaurants, operators of rented kitchen space, multi-brand businesses and managers of chain outlets.

What you will learn: choosing the right scheme, mapping certificates by holder and premises, meeting licence requirements, managing a shared kitchen, controlling ingredients, dispatching products safely, running an IHCS/HAS and preparing for MYeHALAL.

Compliance note: A cloud kitchen is not a separate JAKIM scheme. A central kitchen that supplies food premises needs to meet the food/beverage product certification requirements before those premises apply for the SPHM (Sijil Pengesahan Halal Malaysia, the Malaysia Halal Certificate). The certificate of any shared kitchen operator does not automatically cover every tenant or brand.

Overall flowchart

Overview of halal certification for central kitchens and cloud kitchensStart by identifying the entity, kitchen and brands. If you supply outlets from a central kitchen, use the Skim Produk Makanan dan Minuman (Food and Beverage Product scheme) for the central kitchen; if not, check the premises scheme based on the cloud kitchen's activities. Register the locations and the operator's scope. If the space is shared by several entities, check each certificate holder and the tenant controls; if not, check one operator and the menu in scope. Next come SSM, PBT, FoSIM, workers and the IHCS or HAS, then the register of materials, recipes, SOPs, batches and delivery, followed by the self-audit and MYeHALAL. If approved, the SPHM follows the actual scope; if not, make corrections and refer to the decision.YesNoYesNoYesNo
